Maize Processing

Maize is a staple food that is used often and in many ways in the Zambian kitchen. Up until now the school had to find a way to transport their maize from the distant city of Choma, 180 km away, due to the lack of technical means to process the large quantities themselves.
In February 2009 the school gained the capacity to locally organize and process this staple through the purchase of a dehulling machine and an electrical motor for the maize mill. This brought savings because the transportation and processing costs were immensely reduced. With this change, parents now had the opportunity to pay for their child’s tuition with payment in kind.
